| Shaggy Parasol |

| The
Parasol Fungus is one of the largest and best known of the edible fungi.
It has a creamy brown shaggy cap with
a double ring underneath.
As it grows, it becomes flatter, and takes the shape of a parasol.

When cut, the flesh of the Shaggy Parasol is pinkish or a tempting orange-yellow colour. The spores produced by the cap, are like microscopic white balls, and are spread by air currents, which waft them to new ground.

The Shaggy Parasol grows on its own or in clumps with other parasol mushrooms. It likes to grow on soils rich with nutrients, on old compost heaps, or on ant-hills. The gills, on which the spores grow, have a nice nutty flavour. Parasol mushrooms are popular in cooking, especially in Italy, because they easily absorb olive oil and garlic. |
